DESCRIPTION

This is our flagship cheese. The inner texture is more complex than a traditional Brie-style cheese. It contains not only the ordinary primary and secondary cultures, but cultures which will continue to develop new flavors, textures, and aromas far beyond the normal life cycle of other American products. Our cultures produce a very colorful rind which remind one of a traditional French bloomy-rind’s appearance, but our two inner textures and flavors is an American innovation to the traditional approach.

TASTING NOTES
Strong mushroom and earth, with a touch of bread, grass, and fruit. By combining a mild, firm center and intense soft outer paste, we allow the taster to blend the Brie-like flavor to their own liking. Aroma is rich with butter, citrus, and toffee. Great on a french loaf, sandwich, burger or cheese platter. Serve warm or at room temperature. Complimented by savory fruits: blueberries, strawberries, raspberries, pears, or tomatoes. My favorite preparation is to eat a slice of Battery Park dipped in balsamic vinegar and topped with a whole fresh basil leaf.



 DESCRIPTION

This is another variation on our Battery Park: Bloomy rind. A two texture brie with a beautiful line of Oregon black truffles running through the middle. The Oregon black truffle has been confused for the famous Périgord truffle or “Black Diamond” french truffle in blind taste tests. The Oregon truffle is, however, only 1/10th the price of the famous Périgord truffle. Our hope is to incorporate this now more accessible luxury into the discerning palate of American clientele. It is earthy, mushroomy, and has an almost over-ripe banana like sweetness and fruitiness.

TASTING NOTES
Our truffles are cut into generously sized pieces, and form a nice "ash-line" through the center of the cheese. The inner paste is infused with the sweet, fruity truffle flavor. These cheeses come from the very first curd of the day, so they have the highest moisture and best evenness of texture out of all the cheeses we craft. Enjoy at room temperature with a nice loaf of artisan bread, a bit of olive oil, and mild herbs like basil or sage.
