This is our flagship cheese. The inner texture is more complex than a traditional Brie-style cheese. It contains not only the ordinary primary and secondary cultures, but cultures which will continue to develop new flavors, textures, and aromas far beyond the normal life cycle of other American products. Our cultures produce a very colorful rind which remind one of a traditional French bloomy-rind’s appearance, but our two inner textures and flavors is an American innovation to the traditional approach.
Strong mushroom and earth, with a touch of bread, grass, and fruit. By combining a mild, firm center and intense soft outer paste, we allow the taster to blend the Brie-like flavor to their own liking. Aroma is rich with butter, citrus, and toffee. Great on a french loaf, sandwich, burger or cheese platter. Serve warm or at room temperature. Complimented by savory fruits: blueberries, strawberries, raspberries, pears, or tomatoes. My favorite preparation is to eat a slice of Battery Park dipped in balsamic vinegar and topped with a whole fresh basil leaf.
